Avocado and Egg Breakfast Bowl
Ingredients:

1 ripe avocado

2 eggs
-
Salt and pepper to taste

Optional toppings: chopped tomatoes, sliced green onions, hot sauce
Instructions:

Preheat the oven to 425°F (220°C).

Cut the avocado in half and remove the pit.
-
Scoop out a bit of flesh from each avocado half to make room for the egg.
-
Place the avocado halves in a baking dish and carefully crack an egg into each half.
-
Season with salt and pepper.

Bake for about 12-15 minutes or until the egg whites are set.
-
Top with desired toppings and serve.
