Avocado and Egg Breakfast Bowl

Ingredients:

  • 1 ripe avocado

  • 2 eggs

  • Salt and pepper to taste

  • Optional toppings: chopped tomatoes, sliced green onions, hot sauce

 

Instructions:

  • Preheat the oven to 425°F (220°C).

  • Cut the avocado in half and remove the pit.

  • Scoop out a bit of flesh from each avocado half to make room for the egg.

  • Place the avocado halves in a baking dish and carefully crack an egg into each half.

  • Season with salt and pepper.

  • Bake for about 12-15 minutes or until the egg whites are set.

  • Top with desired toppings and serve.
