This quick and easy savoury meal will fill you up for lunch and the best part is that it only takes a few ingredients. 150g broccoli, finely chopped 1 red pepper, finely chopped 2 spring onions, sliced 6 large eggs 1 tbsp milk 3 slices of cheese STEP 1 Heat the oil in a frying pan and add the broccoli, pepper and spring onions. Fry for 5 mins. Set aside to cool. STEP 2 Whisk the eggs with the milk, add half the cheese in a bowl. Add the cooked veg. Pour the egg mixture into a bowl and add the remaining cheese into the bowl and pop it into the microwave and let it cook till fluffy for 5 minutes.
